For two main reasons: its proximity – like that of the trout –, and its citrus aromas that go so well with the recipe. A wine with lots of character, as fresh as the dish.
It is a family estate dating back to the 1980’s, one of the first independent Irouleguy vineyards to make its own wine. Its sustainable approach favours biodiversity and grape-picking by hand. Which airs the soil and encourages the return of birds which had disappeared from the region. Birds you can see on the label.
