Food and wine : the right match

The Regina’s sommelier, Jean Baptiste Lasausa, has the knack of choosing a wine which will perfectly match your meal. A demonstration of his talent with Pyrenean trout.
Jean Baptiste Lasausa waxes lyrical about wine. The result of a career that began at university, and his love of œnology. He first studied hotelry but soon completed his initial training in Bordeaux with honours in “sommellerie”, discovering his real vocation and ranking him first in his year. Soon after, he joined the Régina, a legendary address for this “local”, proud to share here his passion for wine. He composed a wine-list to “surprise clients and introduce them to real gems”. Like the Domaine Arretxea or that of Brana, unveiled below: 
 
Which wine would you choose to accompany Pyrenean trout?

And why?

For two main reasons: its proximity – like that of the trout –, and its citrus aromas that go so well with the recipe. A wine with lots of character, as fresh as the dish.

Can you tell us about the Domaine de Brana? 

It is a family estate dating back to the 1980’s, one of the first independent Irouleguy vineyards to make its own wine. Its sustainable approach favours biodiversity and grape-picking by hand. Which airs the soil and encourages the return of birds which had disappeared from the region. Birds you can see on the label.
